LES SIGILLÉES
RED 2011 As “little brother” of our Terrasses du Larzac, this Coteaux du Languedoc benefits from the same climate, terroir and know-how for an easier-drinking wine full of freshness and elegance. Soil: rounded stones and gravel with some red clay. Grapes: 70% Grenache, 15% Syrah, 15% Carignan & 10% Mourvèdre Harvest: hand picking with systematic hand selection Production: 33 hl/ha – 15.500 bottles and 1.000 BIB of 5 litres Vinification: Traditional vinification process in cement tanks. “Cuvaison” for 2 to 3 weeks with pumping-over and punching of the cap. Spontaneous alcoholic fermentation with native yeasts. Spontaneous malolactic fermentation right after devatting. Maturation: a 12-month ageing period on lees. Natural decanting thanks to cold winter temperatures. Bottling : at the wine estate, without fining or filtration in order to keep the structure of the wine unspoiled
Vintage: an unusual climate with a spring both early and hot, then a fresh and rainy summer followed by a very nice September. Since ripeness time spread over time, observing and reacting proved essential to accompany this vintage. Eye: a shining colour with garnet hints Nose: a fruity nose showing notes of red fruits and of our local Mediterranean woodland “garrigue”... Palate: a pleasant and suave mouth, both fruity and fresh. The red fruit and garrigue notes are supported by round and elegant tannins. In the end, a very elegant wine with a lasting finish.Ageing Capacity: already pleasant to drink – ageing potential of three to five years Serving Temperature: 16-18° C / 60-65° F Food & Wine Suggestions: this fine Coteaux du Languedoc is a good companion to grilled meat (white or red) and poultry, but also fish in red wine sauce and soft cheese… |
