Les SigillÉes WHITE 2021 This Cuvée Languedoc benefits from the same climate, terroir and know-how as our Clairette du Languedoc to produce a voluptuous cuvée both fresh and elegant. Soil: rounded stones and gravel with some red clay. Grapes:50% Roussanne, 50% Clairette Blanche & Clairette Rose Harvest: hand picking and mechanical. Production: 40 to 45 hl/ha Vinification: destemming, crushing, short skin-contact maceration, pressing once, settling of the juice under cold temperature, thermoregulation then traditional vinification. Spontaneous alcoholic fermentation thanks to native yeasts. Maturation: a one-year ageing on lees. Natural decanting thanks to cold winter temperatures. Bottling: at the wine estate, with no fining & no filtration in order to keep the structure of the wine unspoiled.
Eye: a limpid colour with pale gold yellow hints. Nose: subtle, fresh and lively with aromas of white flowers and white-flesh fruits. Palate: a fine balance between the roundness and the freshness of the fruit. Aromas of white flowers, apricot, white-flesh fruits and grapefruit. Ageing Capacity: to be drunk young. Ageing potential of 3 to 5 years Serving Temperature: 8 to 12°C Food & Wine Suggestions: this fine cuvée Languedoc will be appreciated along with fish, seafood and shellfish, vegeterian & exotic dishes, sushis and vegetable pies. Very pleasant and refreshing for aperitif ! |
