LES SIGILLÉES
RED 2018 As
“little brother”
of our Terrasses du Larzac, this Coteaux du Languedoc benefits from the same
climate, terroir and know-how Soil: rounded stones and gravel with some red clay. Grapes: 65% Grenache, 25% Mourvèdre and 10% Syrah. Harvest: hand picking and mechanical. Production: 40 hl/ha Vinification: Traditional vinification process in cement tanks. “Cuvaison” for 2 to 3 weeks with pumping-over and punching of the cap. Spontaneous alcoholic fermentation with native yeasts. Spontaneous malolactic fermentation right after devatting. Maturation: a one-year ageing. Natural decanting thanks to cold winter temperatures. Bottling : at the wine estate, without fining or filtration in order to keep the structure of the wine unspoiled..
Vintage: not a single week without spring rain until August 17th. Then, until October 15th, dry weather, hot in daytime and chilly at night with wide differences in temperatures (more than 20 °C) resulting in elegant wines, highly fruity, fresh and complex. Eye: intense garnet-red with deep purple hints. Nose: definitely fruity with red fruits (morello cherry) and “garrigue” notes. Slightly peppery. Palate: supple yet well-structured, the mouth reveals both chaacteristics of Grenache i.e it is sharp and unctuous. Freshness and fruit are sustained by round and elegant tannins. It turns out to be voluptuous and well-balanced with a lingering finish. Light in alcohol and very voluptuous ! Ageing Capacity: already pleasant to drink – ageing potential of three to five years Serving Temperature: 16-18° C / 60-65° F Food & Wine Suggestions: this fine Coteaux du Languedoc is a good companion to grilled meat and poultry, but also fish in red wine sauce and soft cheese… |
