Grapes: 40% Syrah, 40% Grenache Noir & 20% Carignan Harvest: hand picking with systematic hand selection Production: 35 hl/ha Vinification: Long vatting for 21 to 31 days with pumping-over and punching of the cap. Spontaneous alcoholic fermentation with native yeasts. Spontaneous malolactic fermentation partly under marc. Maturation: a 28-month ageing period including 14 months in oak barrels. Natural decanting thanks to cold winter temperatures. Bottling : at the wine estate, without fining or filtration in order to keep the structure of the wine unspoiled.
Vintage: a rainy winter which filled the underground water tables, followed by a mild spring, a hot month of July and 2 favourable storms in August and September before a sunny and cool weather during the harvest. Balance, freshness, concentration and elegance are gathered for a great vintage! Eye: a deep garnet-red colour with claret hues. Nose: the nose is distinct, both complex and elegant. Aromas of spices, “garrigue”, black berries and fruit in alcohol. Delicate roasted notes. Palate: a powerful start. It then proves to be fresh, supple and yet fleshy with tannins that are firm, melted and elegant. Spicy undertones. A balance leaning towards smoothness ; fine persistence. Ageing Capacity: already pleasant to drink – ageing potential of seven to eight years Serving Temperature: 18° C / 65° F - You are advised to decant it for at least 2 hours… Food & Wine Suggestions: Thanks to its elegance and mineral character, this distinctive and complex wine will be an ideal companion to grilled and roasted meat – beef rib, duck breast and a good Cassoulet. |
