CUVÉE CHARLES 2018 An exceptional terroir in Languedoc, Terrasses du Larzac combine Languedoc generosity with Larzac freshness for cuvées with character whose keywords are purity and elegance Soil: rounded stones and gravel with some red clay. Grapes: 33% Carignan, 32% Grenache, 32% Syrah & 3% Mourvèdre Harvest: hand picking with hand selection Production: 35 hl/ha Vinification: Long vatting for 23 to 26 days with pumping-over and punching of the cap. Spontaneous alcoholic fermentation with native yeasts. Spontaneous malolactic fermentation partly under marc. Maturation: a 24-month ageing period including 12 months in oak barrels. Natural decanting thanks to cold winter temperatures. Bottling : at the wine estate, without fining or filtration in order to keep the structure of the wine unspoiled.
Vintage: Frequently rainy weather until August. Then, until October 15th, dry and warm weather during the day and rather cold at night, with great temperature variations (>20°C) resulting in fruity, fresh, complex and definitely elegant wines. Eye: a deep garnet colour with darker hues. Nose: the nose is distinct, both complex and elegant. Aromas of spices, “garrigue”, and fruit in alcohol. Delicate roasted notes. Palate: The mouth is supple and fresh with melted and fine tannins. Red & black berries. Spicy notes & juniper. A balance based on smooth roundness and a long-lasting persistence. Ageing Capacity: already pleasant to drink – ageing potential of seven to ten years Serving Temperature: 18° C / 65° F - You are advised to decant it for at least 2 hours… Food & Wine Suggestions: This complex and elegant wine provides a refined companion for T-bone steak, meat in sauce, game (duck, boar…) or a very good Cassoulet… |
