LES TERRASSES 2018 Terroir of exception in Languedoc, Terrasses du Larzac combine Languedoc generosity with Larzac freshness for cuvées with character whose keywords are purity and elegance. Soil: rounded stones and gravel with some red clay. Grapes: Grenache 50% Syrah & Carignan Harvest: hand and machine picking Production: 29 hl/ha Vinification: Traditional vinification process in cement tanks. “Cuvaison” for 2 to 4 weeks with pumping-over or punching of the cap depending on the grapes. Spontaneous alcoholic fermentation with native yeasts. Spontaneous malolactic fermentation right after devatting. Maturation: an 18-month ageing period on lees in tanks. Natural decanting thanks to cold winter temperatures. Bottling : at the wine estate, without fining or filtration in order to keep the structure of the wine unspoiled.
Vintage: very early spring weather with regular rainfall until mid-May, followed by unprecedented drought. Ideal conditions at harvest time. Excellent ripening has produced well-balanced wines combining fruit, freshness and complexity. Eye: a bright colour with crimson hints Nose: predominantly fruity, blending red fruits (cherry) with black berries (blackcurrant, blackberry) ; hints of undergrowth and plum. Palate: a very fresh mouth both round and mineral with a fine structure and soft tannins. Aromas of fruits, spices and of our local scrubland “garrigue” as well as eucalyptus and mint which enhance freshness. Ageing Capacity: already pleasant to drink – ageing potential of minimum five years Serving Temperature: 18° C / 65° F Food & Wine Suggestions: this wine is a good companion to grilled meat (T-bone steak, lamb, pork, chicken) but also to duck with olives, Italian pasta and cheese... and aperitif !
