Clairette, the appellation has a long
tradition and is now the oldest white
AOC in Languedoc since 1948
!
Soil :
rounded stones and gravel,
some red clays.
Grapes

botrytised white Clairette (100%)
Harvest :
hand-picking
Production :
9 hl/ha
Vinification :
vinification in oak barrels.
Ageing :
a 3-year (minimum) ageing period is required to be entittled to the Rancio
appellation.
But, for us, it is a 7-year ageing in barrels with no topping !
Bottling :
at the estate with neither fining or filtration to better protect the structure
of the wine.

Vintage :
A superb balance between acidity and freshness for wines that are both fresh and
concentrated. A great vintage
!
Eye :
a golden yellow colour with orange highlights
Nose :
a complex nose with aromas of dried apricot, quince, honey, walnut, plum ;
subtle notes of vanilla and white blossoms...
Mouth :
the palate is velvety and adds aromas of almond and prune with a mint finish. A
surprisingly fresh and balanced wine, very original indeed.

This sweet Rancio Clairette du Languedoc goes wonderfully well with
braised foie gras, Roquefort, goat cheese with honey, pigeon pastilla with figs
but also tarte Tatin, apricot crumble or lemon meringue pie… or can be drunk as
an appetizer or a digestive drink.
