70% in stainless steel tank. Spontaneous alcoholic fermentation with native
yeasts. Spontaneous malolactic fermentation.
18 months on lees. Natural decanting thanks to cold winter temperatures.
at the wine estate, with a very light filtration in order to keep the structure
of the wine unspoiled.
a mild and dry winter followed by a hot and rainy spring. Cool weather during
early summer, then a heatwave at the end of August and early September. A
favourable rain on September 13th before an ideal weather during the
harvest resulted in perfectly healthy grapes of optimal ripeness. In the end,
the wines are fruity, elegant, well-balanced and fresh.

this Clairette du Languedoc is a perfect companion to dishes such as scallop,
shellfish with garlic butter, monkfish with bacon or other fish in sauce, as
well as white meat with mushrooms and cream. When aged, it can also be served
with a cheese tray. Excellent with cheese dishes !
